I cannay offer any advice on the carb problem.
But any chance of a side pic. That seat looks really tall. Is it the camel hump type?

I made a restrictor out of an old Mikuni jet and an in-line connector. I drilled the jet to 1/8” and it made a big difference. The first half of the throttle is good, the top end is almost right but you have to cavitate a little to get from half to 3/4. Then the high speed jet kicks in. There’s still a big between 1/2-3/4 throttle. I want to believe the jetting was established long ago and it is something else that is probably really simple. I don’t have a means of verifying the pop off pressure at this time but I know it could be the problem.

"top end is almost right but you have to cavitate a little to get from half to 3/4. Then the high speed jet kicks in. "

The Main (High) Jet works from 1/3 to 3/4 throttle.

The High Speed Adjuster Screw controls 3/4 to Full throttle...

Found that the water box is leaking exhaust into the hull. I think it started as a small leak and caused a rich condition that I couldn’t tune for and now it is leaking bad enough to completely choke it out. At least I found the problem.
