I suppose just wave jumping and general riding at the lake mostly but some ocean riding too. I was thinking a single 48mm buckshot?

A single carb would definitely be my recommendation. I'm not a fan of BS's due to their toggle switch like tendencies. I'd do an SBN or Novi if price is no concern.

Why were you hoping for a BP?

Re: 89 Kawi X2 first build

Well when I first got my hull and was looking for an engine, it just seemed like everyone was wanting a BP 750 over the SP. so me being completely new to all this, I just figured the BP was the more desired engine. But after you said something I did read what I could find about the SP and it does seem better fitted for how I plan to use it because I am not looking for top end. Sorry, that was my ignorance.

The big advantage of the BP over the SP is that replacement crankshafts have much better availability for the BP. I definitely prefer the SP's low end power. Heck, my stock SP in my 750sx nearly matches the top speed of one of my buddy's BP that has several mods. I'll beat it in acceleration by quite a bit and reach 46 MPH way faster than he can. His tops out at about 48 MPH.
